Baked Atlantic cod with baked potato and asparagus

You will need

  • Saucepan

Ingredients

Serves 4
  • 4 fillets of Atlantic cod
  • 4 slices of parma ham
  • 12 spears of asparagus
  • 1 tbsp of butter
  • Freshly ground black pepper
  • 4 tbsp of rapeseed oil
  • Salt

For the hollandaise sauce

  • 120g butter, cold and cut into cubes
  • 2 large free-range egg yolk
  • 1 tsp of white wine vinegar
  • 1 tbsp of freshly squeezed lemon juice
  • Pinch of salt

For the baked potatoes

  • 4 large potatoes
  • 4 tbsp of salted butter
  • 1 tbsp of crack black pepper

Preparation Method

  1. To make the hollandaise sauce, place the egg yolk and white wine vinegar in a large bowl over a saucepan of gently simmering water. Whisk the egg yolks slowly adding the cubed butter one by one after each cube of butter melts. Whisk continuously until it is combined and the sauce has thickened. Add lemon juice and a pinch of salt. Turn the heat off and keep warm hollandaise sauce over the saucepan of water, stirring occasionally.
  2. Preheat the oven to 160˚C/Gas mark 3.
  3. Pierce each potato in several places using a fork, spread butter on the top and sprinkle with black pepper and salt. Wrap each potato tightly in tin foil with no gaps or openings. Transfer potatoes into the roast tray and pop in the oven. Bake for about 70 minutes or until tender.
  4. Grease and line with baking paper the bottom of a roast tray. Wrap the Atlantic cod filets in parma ham and place them on a small roast tray lined with baking paper. Transfer to the oven and bake for 15 minutes.
  5. Meanwhile, remove the woody end off the asparagus. Bring a saucepan of salted water to the boil. Add the asparagus and cook for 3-4 minutes or until bright green and tender. Immediately remove asparagus from the saucepan into the ice water to cool them down and stop the cooking process. Just before serving, set a non-stick pan over medium-high heat. When the pan has heated, add butter and cook asparagus for 3 minutes. Seasoning with freshly ground black pepper and salt.
  6. Spread hollandaise sauce over warm plates. Place baked potatoes on the bed of asparagus on the side of plate arrange baked cod skin-side up and serve straight away.
