You will need
- Small cooking tray
- Large bowl
- Wire whisk
Ingredients
Serves 4
- 3 handful of rocket salad, washed
- 160g feta cheese, crumbled
- 8 parma ham slices
- 2 pears, peeled
For the dressing
- 3 tbsp of olive oil
- 3 tbsp of agave syrup
- 1 tbsp of lemon juice
Preparation Method
45 minutes
- Preheat the oven to 170˚C/Gas mark 3½.
- Remove core from pears and cut into quarters. Wrap each pear in the parma ham and place on the small cooking tray. Drizzle with olive oil and pop in the oven for 15 minutes.
- In a large bowl whisk together all ingredients for dressing. Add rocket salad and toss well.
- Spread rocket salad among plates and in the centre of the plate place baked pears. Sprinkle feta cheese over the salad and serve straight away.
