Basil Pesto

A simple recipe for Basil Pesto ideal for pasta, gnocchi and many more!

You will need

  • Large jug
  • Hand blender

Ingredients

Serves 4
  • 2 bunches of fresh basil
  • 80 ml (3 fl oz) olive oil
  • 80 ml (3 fl oz) rapeseed oil
  • 60 g (3 oz) pine nuts, lightly toasted
  • 40 g (1 1/2 oz) grated parmesan cheese
  • 4 garlic clove
  • 2 tbsp of lemon juice
  • Freshly ground black pepper
  • Salt

Preparation Method

10 minutes
  1. To make basil pesto place all ingredients into a large jug and using a hand blender blitz well all ingredients.
  2. Finish seasoning with salt and freshly ground black pepper.
  3. Transfer into a container and keep covered in the fridge.
