This beef cheeseburger with Clonakilty black pudding and apple is a great way to shake up your beef burger routine. Summer means barbecue, and when it comes to a summer barbecue, It’s hard to better a good beef burger recipe.

Serves 6
- 6 burger buns
- 6 slices of Dubliner cheese
- 6 slices of beef tomato
- 6 large leaves of cos lettuce
- 6 slices of red onion
For the beef burger
- 600g minced beef
- 150g green apple, peeled and grated
- 190g Clonakilty black pudding, grated
- 2 tbsp of bicarbonate soda
- 2 tbsp of rapeseed oil
- Freshly ground black pepper
- Salt
For the honey and mustard mayo
- 2 tbsp of mayonnaise
- 2 tsp of dijon mustard
- 1 tsp of honey
Preparation Method

- For the burger, combine the minced beef, Clonakilty black pudding, apple, bicarbonate soda, black pepper in a large bowl and mix until everything is evenly combined. Divide into 6 portions and shape into patties. Make them slightly bigger than your bun, as they will shrink when cooked. Transfer on a small cooking tray and pop in the fridge for few minutes before cooking.
- To make sauce place in a small mixing bowl mayonnaise, dijon mustard, honey and whisk together until smooth.
- Heat a griddle pan over a medium heat and place the burger patties in the pan, fry for 5 minutes on either side or until cooked through and browned. Once cooked top with the Dubliner cheese.
- Spread honey and mustard mayo on each side of the toasted bun. Place the bottom of the bun onto a plate to build your burger. First, layer the salad leaves, tomato and red onion. Pop the burger on and place the bun tops on. Serve straight away.
