Fish pie

Fish pie is typical family comfort food. This warming and delicious meal is so easy to prepare. Ask your fishmonger for a selection of fish scraps they are perfectly fine for a fish pie.

You will need

  • Large pot
  • Large bowl
  • 4 small ovenproof dishes

Ingredients

Serves 4
  • 200g salmon, skinned and cut into 1cm pieces
  • 200g cod, skinned and cut into 1cm pieces
  • 100g streaky bacon, finely sliced
  • 600ml fish stock
  • 150ml white wine
  • 150ml single cream
  • 800g mashed potatoes
  • 100g cheddar cheese
  • 2 medium carrots, finely diced
  • ½ leek, finely sliced
  • 1 small onion, finely diced
  • 1 celery stick, finely sliced
  • 2 tbsp of salted butter
  • Freshly ground black pepper
  • Salt

Preparation Method

130 minutes
  1. Melt the salted butter in a large pot over medium-high heat. Add the onion together with leek and fry for 5 minutes or until softened. Add the streaky bacon and continue cooking until it colours, then add carrots, celery sticks and keep cooking for further 5 minutes.
  2. Pour white wine and bring to the boil. Add fish stock, potatoes and gently bring to the boil. Reduce heat and simmer for around 15 minutes or until potatoes are tender and firm.
  3. Meanwhile, preheat the oven to 180˚C/Gas mark 4.
  4. In a large bowl combine mashed potatoes, cheddar cheese. Season with black pepper and salt.
  5. Divide fish between 4 small ovenproof dishes. Pour the sauce over the fish and gently spread the mashed potato over the top. Bake in the oven for 40 minutes or until mashed potatoes are crisp and golden on top.
  6. Ready fish pie serve straight away with lemon wedges for squeezing over.
