French omelette with ham and cheese

You will need

  • Large non-stick frying pan
  • Bowl
  • Wire whisk
  • Spatula

Ingredients

Serves 1
  • 2 large free-range egg
  • 30g ham, finely diced
  • 20g cheddar cheese, grated
  • 2 tbsp of finely chopped chive
  • Few sprigs of chive, finely chopped
  • 1 tbsp of butter
  • 1 tbsp of rapeseed oil
  • Freshly ground black pepper
  • Salt

Garnish

  • 2 cherry tomatoes
  • Fresh parsley leaves

Preparation Method

  1. Whisk together in a small bowl eggs and cream until smooth. Add ham, chopped chive and season with freshly ground black pepper and salt.
  2. Set a non-stick pan over medium-high heat. When pan has heated, add butter and rapeseed oil.
  3. Pour the egg mixture and gently shake the pan to cover the entire surface. Cook for around 20 seconds or until it begins to set. Add cheddar cheese and start rolling in the middle of the pan. Shake the pan again to redistribute the uncooked egg.
  4. Continue cooking the omelette until you have set the base, but it is still slightly runny inside.
  5. Transfer omelette to the plate and garnish with cherry tomatoes and fresh parsley leaves.
