Fresh fruit Pavlova its dessert named after famous Russian ballerina, Anna Pavlova. There’s a great debate about who made it first, but the fact is that there is Russian inspiration here! The Pavlova is graceful, beautiful a perfect dessert! It’s crisp on the outside with marshmallowy goodness on the inside, piled high with fluffy cream and loads of fresh fruit. This pavlova recipe is an absolute summer perfect summer dinner party dessert! It’s one of the most popular desserts in the summer on the Wild Atlantic Way.

You will need

  • Stand mixer or electric mixer
  • Large baking sheet
  • 20cm springform cake tin
  • Large bowl
  • Piping bag
  • Wire whisk
  • Spatula
  • Baking paper

Ingredients

Serves 12
  • 300ml double cream
  • 170g fresh fruit (strawberries, raspberries, blueberries, kiwi)

For the pavlova

  • 220g caster sugar
  • 4 large free-range egg whites
  • 1 tbsp of cornflour
  • 1 tsp of vanilla extract
  • Pinch of salt

Preparation Method

180 minutes
  1. Preheat the oven to 140°C/Gas Mark 1 and line baking sheet with baking paper.
  2. Place egg whites, caster sugar na salt into a clean bowl. Whisk them at a medium speed until they start to form nice firm peaks. Add cornflour with vanilla extract and continue whipping for 2-3 minutes. Turn the mixer up to the highest speed and whisk for 5 minutes or more until the meringue is white, glossy and smooth.
  3. Put on the baking sheet ring from the springform cake tin and fill with meringue mixture, making sure that there is no air bubble trapped inside. Gently remove the ring and place the baking sheet in the oven for 20 minutes. When time pass reduce heat in the oven to 100°C/Gas Mark ¼ and continue baking for another 60 minutes.
  4. Meanwhile whip the cream until soft peak and prepare fruit. Wrap in cling film and refrigerate till needed.
  5. Remove pavlova from the oven and allow to cool completely and cut into 12 portions.
  6. Fill a piping bag with whipped cream and pipe onto each piece of pavlova a good bit of cream. Place on the top fresh fruit and enjoy!
