Granola bars

You will need

  • Food processor
  • Large mixing bowl
  • Medium size pot
  • 22cm baking dish
  • Baking tray
  • Baking paper
  • Clingfilm

Ingredients

Serves 12
  • 600g dried dates
  • 370g rolled oats, gluten-free
  • 310g nibbed almonds
  • 150g hazelnuts, skinned
  • 250g peanut butter
  • 250g high-quality honey

Preparation Method

45 minutes
  1. Preheat the oven to 170˚C/Gas mark 3.
  2. Mix nuts on the baking tray and place in the oven for 10-15 minute or until lightly toasted. Set aside to cool completely.
  3. Fill a medium-size pot with water and bring to the boil. Add dates and turn off the heat. Remove dates from the pot after 10 minutes and remove excess of water. Work with small batches to ensure that water is completely gone.
  4. Place into food processor nuts and oats and pulse them in a until lightly ground. Transfer them to a large mixing bowl. Repeat the process with warm dates but this time blitz to a paste. Combine with nuts.
  5. Mix peanut butter and honey.
  6. Lay 22cm baking dish with baking paper and transfer mixture into dish and spread evenly. Wrap over with clingfilm and refrigerate for 40 minutes before cutting granola to the bars.
