Pea and mint soup is a true classic. A super healthy starter or snack that’s is excellent hot or cold. The combination of mint and peas is unique, and it’s a very refreshing flavour for a bowl of soup in the summer.

Ingredients
Serves 4
- 450 g (1 lb) peas, frozen or fresh
- 1 litre (1 3/4 pint) of vegetable stock
- 80 ml (3 fl oz) single cream
- 1 medium size white onions, peeled and roughly chopped
- 1 garlic clove, minced
- 6 twigs of fresh mint, roughly chopped
- 2 tbsp of butter
- 2 tbsp of rapeseed oil
- Freshly ground black pepper
- Salt

- Single cream
- Fresh mint leaves
Preparation Method
30 minutes
- Melt the butter in a large pot with thick bottom. Add rapeseed oil and saute chopped onion with minced garlic over medium-high heat until they softened.
- Add peas and mint with vegetable stock and bring to a boil. Reduce heat and simmer uncovered for 3 minutes.
- Pour cream into a pot and using a hand blender blitz the soup until smooth and creamy. Finish seasoning with salt and freshly ground black pepper.
- Ladle into the soup bowls and serve with a swirl of cream and fresh mint leaves.
