Penne Pasta with Mushrooms Sauce and Spinach

This Penne Pasta with Mushrooms Sauce and Spinach. Ready in 15 minutes, this easy penne pasta recipe is full of flavour and perfect for getting dinner on the table on busy days. Creamy mushrooms sauce with pasta and spinach have always been a great combination. I use a button mushroom in this recipe, but don’t hesitate to make it fancier and use a different type of mushrooms.

Penne Pasta with Mushrooms Sauce

 

You will need

  • Large pot
  • Large frying pan
  • Colander

Ingredients

Serves 4
  • 400 g (14 oz) penne pasta
  • 400 g (14 oz) mushrooms, cleaned and sliced
  • 250 g (9 oz) spinach, washed and roughly chopped
  • 1 small white onion, finely diced
  • 3 garlic cloves, thinly sliced
  • 300 ml (10 fl oz) cream
  • 2 tbsp of sour cream
  • 3 tbsp of olive oil
  • 4 tbsp of parmesan cheese, grated
  • Freshly ground black pepper
  • Salt

Preparation Method

20 minutes
  1. Bring a large pot of salted water to a boil and cook the penne pasta until al dente.
  2. Set a large frying pan over medium-high heat. Drizzle with olive oil and saute the onions with garlic. When the onion has softened add mushrooms to the pan and cook them until they have softened and cooked down.
  3. Pour cream into the pan and reduce by half. Season with freshly ground black pepper and salt.
  4. Add to the pan spinach, sour cream, and bring to a boil. Turn off the heat and toss well. Put the cooked penne pasta and stir to combine.
  5. Divide Penne Pasta with Mushrooms Sauce and Spinach into portions and sprinkle with grated parmesan cheese. Serve straight away.
