Rocky road

Rocky road is simple to make and is the most intensely chocolatey treat you could wish for. Rocky road is fun for all of the family, and you can invite kids to help you out.

You will need

  • 20cm x 30cm baking tin
  • Medium size pot
  • Large heatproof bowl
  • Parchment paper

Ingredients

Serves 12
  • 470g dark chocolate drops, at least 53% cocoa
  • 370g condensed milk
  • 60g unsalted butter
  • 250g mini marshmallow
  • 300g digestive biscuits, roughly crushed
  • 120g Maltesers
  • Handful of smarties
  • Handful of white chocolate drops

Preparation Method

30 minutes
  1. Line 20cm x 30cm baking tin with parchment paper.
  2. Place a large heatproof bowl with dark chocolate over a pot of gently simmering water. Melt the chocolate and mix through butter, the moment butter has melted and completely combined, take the bowl off the heat.
  3. Add in condensed milk, marshmallow, digestive biscuits, maltesers, smarties and white chocolate. Mix everything until well combined, then pour the mixture into the lined tin. Refrigerate for at least 2 hours until set.
  4. Once the rocky road has firm, remove from the tin and cut into the portions.
