Tiramisu biscuits

You will need

  • Stand mixer or electric mixer
  • Large mixing bowl
  • Large baking sheet x 2
  • Sieve
  • Piping bag
  • Baking paper

Ingredients

  • 225g egg whites
  • 195g egg yolks
  • 195g plain flour
  • Pinch of salt

Preparation Method

55 minutes
  1. Preheat the oven to 170˚C/Gas mark 3. Lay two baking sheets with baking paper.
  2. Using stand mixer whisk egg whites together with sugar and pinch of salt until firm peaks. Whisk in gently egg yolks, one by one.
  3. Sieve flour gradually into a whipped eggs and mix until combined.
  4. Fill a piping bag with dough and pipe onto the each baking sheet 12-15 tiramisu biscuits and place in the oven for 12-15 minutes or until golden brown.
  5. Remove from the oven and carefully transfer cookies onto wire rack to cool completely.
