Tuna steaks with sweet potato and red onion wedges

You will need

  • Griddle pan
  • Small roast tray x 2

Ingredients

Serves 4
  • 4 thick tuna steaks
  • 4 tbsp of rapeseed oil
  • Freshly ground black pepper
  • Salt

For the red onion wedges

  • 4 red onions, peeled and cut into quarters
  • 3 tbsp of olive oil
  • Freshly ground black pepper
  • Salt

For the sweet potato wedges

  • 3 large sweet potato, washed and cut into wedges
  • 4 tbsp of olive oil
  • 2 tbsp of finely chopped fresh thyme
  • Freshly ground black pepper
  • Salt

Preparation Method

50 minutes
  1. Preheat the oven to 160˚C/Gas mark 3.
  2. Toss the sweet potato wedges in a roasting tray with olive oil, salt and black pepper. Cook in the hot oven for 30, or until golden and cooked through.
  3. Place the onion wedges into a small roasting tray. Drizzle with olive oil and sprinkle over freshly ground black pepper and salt. Put in the oven for 20 minutes.
  4. Heat a large griddle pan over a high heat and massage the tuna steaks with a little olive oil, then season with salt and freshly ground black pepper. Cook for 1-2 minutes on each side for medium rare. Remove from the pan and place in warm place for 2 minutes.
  5. Put the rested tuna steaks on warm plates and arrange some of the sweet potato wedges stack to the side. On the top of tuna steaks place roast red onion and serve straight away.
